Faux Beef Stew

I have been making this yummy recipe for a while. I found a quick and easy way to have stew without the long effort of browning my meat and then waiting for it to cook in the crockpot all day. I think the idea of the crockpot is great, but I don’t enjoy many of the recipes and dishes that utilize the crockpot. My biggest beef, lol, pun intended, with it is the need to brown your meat before putting it in. So, since I need to brown meat anyway, I came up with this hack that is quite easy to make dinner in under an hour. Fun, right?

Ingredients

  • 1 lb ground beef

  • 32 oz chicken broth

  • 32 oz beef broth

  • 14 oz can tomato soup

  • 16 oz bag of frozen missed vegetables

  • 1 medium onion, diced

  • 2-3 cloves of garlic, minced

  • 2t chili powder

  • salt and pepper to taste

I begin by browning my meat in my big soup pot. once the meat is browned, I add the onion and garlic and then saute until the onions are translucent. I then add the rest of the ingredients to the pot. I bring the soup to a boil and then let it simmer for 20-30 minutes. It is quick and easy and oh so yummy!
