Beef and Potato Hobo Pie Recipe

This recipe is quite yummy! And it is great for leftovers if you want something to make quickly throughout the week. Typically you make hobo pies with cast iron sandwich makers in a campfire, but you can treat them like a grilled cheese sandwich as well. We have a sandwich maker that makes this really easy. We have one similar to this one. With a sandwich maker, you can make these really easily.

Ingredients

  • 1 lb ground beef

  • 3-4 russet potatoes, diced

  • 1 small-medium onion, diced

  • 3-4 cloves of garlic, minced

  • shredded cheddar cheese

  • 1 teaspoon of chili powder

  • 1/2 teaspoon of oregano

  • 1/2 teaspoon of thyme

  • salt and pepper to taste

  • oil for cooking

The fun thing about this recipe is you can put just about anything in it. You can season as you like. If you are feeling adventurous add some spice to it to give it a kick. Make sure you dice everything up into pretty small pieces to make it easier to create the pies later. Oil and season you diced potatoes. Roast the potatoes in the oven at 450 degrees for 20-30 minutes. The potatoes should be soft on the inside, but crisp on the inside. While the potatoes are roasting you can start sauteing the garlic and onion in a pan with oil. Once the onion begins to become translucent, add the ground beef and seasonings. Saute until the meat is nice and brown.

Once both the potatoes and beef mixture are cooked, mix them together.

Next, you heat up your sandwich maker or grill pan. Assemble the mixture along with a layer of cheese on one side of the bread. Put the other piece of bread on top. Place the sandwich in your sandwich maker and cook until your bread is at your desired brownness.
