Peanut Cluster Recipe

This is my favorite recipe for a quick treat. They are so simple to make it is kinda silly.

You start with an 11-12 oz bag of either dark, semi-sweet, or bittersweet chocolate chips and another 11-12 oz bag of butterscotch chips. You melt the chips in a bowl. I use the microwave and stir frequently to make sure I don't overcook them. Then you pour in a 16 oz jar of unsalted (or salted if you prefer) roasted peanuts. Mix until the peanuts are well coated. Then you scoop them into clusters. I usually use a tablespoon for my scoop. I finish by refrigerating them until they firm up. I keep them in the fridge and pull them out as need. This assures that your clusters stay separated. If you leave them out, they do get softer and depending on the temperature of your house, they may become messy.
