Gluten-Free​ Peanut Butter and Chip Bars

This summer I spent a few days with my mentor at her cottage and she made these amazing bars for dessert/snack. I may have eaten more than my fair share, lol. So, I thought I would let the rest of you get addicted to these with me by sharing this amazing recipe. If you look not so closely, someone has already taken a sample before I could even get to take the picture. I have been experimenting with the recipe and hope to eventually have it a little more paleo-friendly. But here is the original recipe.

Ingredients

  • 1/2 C butter
  • 1 C creamy peanut butter
  • 2/3 C light brown sugar
  • 2/3 C granulated sugar
  • 1 t baking soda
  • 1/4 t salt
  • 2 large eggs
  • 1 t vanilla
  • 1 1/4 C old fashioned oats
  • 1 1/4 C shredded coconut
  • 1 C chocolate chips
  • 1 C butterscotch chips

Begin by preheating the oven to 350 degrees. After that, cream both the butter and peanut butter with the sugars. Next, beat in the baking soda, salt, egg and vanilla. Finish by mixing in the oats, coconut flakes, and both chips. Bake for 20 minutes or until the edges have just turned brown. The center will have risen and still be soft. As it cools the center will settle. Once they are cooled, you can cut them up and enjoy.

I find that putting them in the refrigerator to get them nice and cool helps with cutting them. You can freeze them or put them in the fridge to stay fresher longer. They are just as fresh after being frozen and thawed, so they make a great make-ahead dessert.
