Chocolate Covered Peanut Butter Crackers

A tasty, last-minute addition to our Christmas treats this year, were these fun and easy "cookies." I have no idea what to call them, but a few days after making them I found them at a local coffee shop. So, I guess I'm not the first to come up with them. The recipe is simple. Make cracker sandwiches using Ritz crackers and Jiff crunchy peanut butter. I am a huge fan of using crunchy. You can, of course, use whatever type of peanut butter you want, but crunchy Jiff and Ritz are my favorites. The fun part is dipping the sandwiches into your choice of melted chocolate. I melt Ghirardelli Bittersweet chips for mine. I have not figured out the ratios exactly, but if I have leftover melted chocolate, I just grab some more crackers and make myself more sandwiches. More is always better, am I right? I am hoping you give these a try. They are so yummy! Let me know what you think.
