Bacon, Burger and Frites
We found this recipe on Pinterest. Most of my family loves it. I have some picky eaters. So, finding something everyone loves is almost impossible. We are trying to eat on a relatively Paleo diet. With 6 of us, it is a struggle to find things that fill us up that don't completely break the bank. We altered this recipe quite a bit from the original. Mostly cuz of my picky eaters, but also for easy of cooking. Here is the original recipe.
Ingredients
- 1 pound ground beef
- 4-5 chopped potatoes coated in olive oil, salt, and pepper
- 2-3 garlic cloves, minced
- 1 onion, diced
- 1 package of bacon, cut into bite-sized pieces
- 6-8 eggs scrambled
- 1 bag of baby spinach or kale
- Salt and pepper to taste
We begin by roasting the potatoes on parchment paper at 500 degrees for 20-30 minutes. Or until golden brown. I give them lots of room and flip them about 15 minutes in. While the potatoes are roasting, I cook the bacon till it is almost crisp in a large frying pan. I then add the onion and garlic to the pan and cook those until the onion is more translucent. By now your bacon should be crisper. I add the beef and salt and pepper to taste. Once the beef is browned, I add the spinach or kale and put the lid on, turn down the burner, and let it steam a bit. After a couple of minutes, I mix everything and turn the burner off, but put the lid back on. Then I move on to scrambling my eggs. Once that is done and the potatoes are ready, I mix it all together and serve. Reheats well too!
